It’s Indian-style claypot rice done 60 ways at D Brother’s
When it comes to big flavours, no one does it better than Joshua Tharmalingan of D Brother’s Claypot who’s put his own spin on a Chinese favourite.
KUALA LUMPUR: While claypot rice is often associated with Chinese cuisine, one enterprising Malaysian decided to put his own spin on this local favourite.
Joshua Tharmalingan, 46, may not have inherited these recipes from his ancestors nor is he a trained cook by his own admittance, but he does have a love for cooking, a hobby he put to good use when he lost his job as a driver in 2018.
With the encouragement of his wife, he decided to sell his home-cooked food as a means of earning an income.
After lots of experimentation in the kitchen, Joshua was confident enough to open his own restaurant offering India-style claypot rice.
Not only is his claypot rice big on flavour, it’s big on variety too, with 60 combinations of flavours to cater to just about everyone’s preferences whether poultry, vegetables, seafood or mutton and venison.
His restaurant, D Brother’s Claypot, is located right above the famous TMC Bangsar supermarket.
“My wife has been my biggest inspiration. Imagine not having a culinary background, then taking the plunge to open my own restaurant. If not for my wife, I wouldn’t be here,” he told FMT.
The claypot offerings here have different spice levels – from only slightly spicy at ‘one’ to tongue-burning spicy rated as ‘ten’. So pick wisely!
FMT tried two claypot rice dishes here: one a customised order that Joshua named the ‘remix’ version and the other being the ‘tenggiri claypot rice’ which is on the menu.
The ‘remix’ version was a combination of seafood and poultry and therefore consisted of prawns and squid as well as chunks of chicken. A generous garnishing of ikan bilis gave this dish a nice, crispy crunch.
If you’re a little hesitant about the spice level, request for a not-too spicy version. Cooked with basmati rice, each grain is coated evenly with the thick gravy, making every mouthful a lip-smacking experience.
The portions are pretty big, so either come famished or bring a friend or two along.
The tenggiri fish claypot rice meanwhile almost resembles a fish curry. But don’t be fooled – it’s a claypot dish with basmati rice, a thicker-than-usual gravy and a distinctly tangy flavour that’ll make your mouth water – literally.
Other claypot offerings include a seafood mix of salmon, squid and prawns, and a clams-prawns combination. Joshua is also open to whipping up customised orders as he did for FMT, so don’t hold back on your requests.
If you’re in the mood for claypot rice with venison or mutton ribs, do drop by over the weekend as these specialities are only available then.
